Things

It's been another whirlwind week. Where does the time go, anyway???

-Daryl has been working a lot less - he's on a research month. He still has to go to work sometimes, but he's home a lot, and studying for board exams.

-We bought a laptop off of eBay. Now I can blog in the living room and it's more comfy. :-)

-I had a great visit with my friend Angie yesterday! So nice to see her again.

-We have cabin fever. The weather is warmer now, and that is a huge plus. Last Saturday I took all the girls sledding, and I didn't wear mitts for most of the time we were out. So nice!
But, this makes me all the more anxious for spring and summer. The other day a friend and I were planning a camping trip and I started getting so pumped about being OUT again.

-Our cabin fever will be cured soon, hopefully. Right now we planning 2 trips in the next couple months. I don't want to list places, but if you want to know you can email me. We are going therer for interviews, which is another whole story.

Okay, here's the story, for those of you who don't yet know...
We have decided that Daryl is going to apply for a (3 year) cardiology residency. I know, it sounds crazy, doesn't it?
But we have prayed and prayed and nothing seemed right, as far as what to do after this summer when he's officially done.
When he finished his cardiology rotation last month, it just grabbed him. He loved it. He was excited to go to work, and that says a lot to me! When he told me he was interested in pursuing a career in it, I felt like I should be upset (I mean, really, who wants to go through another 3 years of residency?), but I wasn't. It truly felt led by God.
So now, we will go for the interviews, keep praying, and see what happens.
And Yea! for us, because that means travelling! :-)

My brain is getting tired...severe lack of coffee and sleep these days. Oh, Emilie is sleeping a bit better since I've been giving her a bottle after her nursing session every night. I'm so glad to be getting an extra bit of sleep.

More on Food

Thanks for all your ideas! I haven't checked all of them out yet, but I plan to. I was surprised how many recipes I use already that I forgot about. And it was a fun challenge to grocery shop yesterday and think of everything I could make without meat.
Here's a menu for the next little while...HIGHLY subject to change!

- Rice and Beans (with pico de gallo), and tortillas if I have time and energy!
- Homemade Mac and Cheese, with veggies on the side
- Chickpea Burgers
- Spinach and/or red pepper lasagne
- Broccoli Frittata
- Creamed Eggs on cornmeal mush (or polenta, as non-Mennos call it):-)
- Vegetable couscous (hope to find a Morrocan recipe that I know I have somewhere)
- Veggie Pizza with feta
- Butternut Squash curry (made by Daryl, and it's good!)
- and I'll think of some way to use my tofu... :-/
oh, and don't forget, I WILL throw one or two meals in there with beef, chicken or venison!

Daryl (to the girls): I'm not running a hangnail clinic at 9:00 at night!

Help, I'm Hungry...

I live with a health nut. Okay, he's not a true health freak...I mean, he still loves a good apple pie with ice cream, or a big bag of chips while watching a movie.

But the other day he came home with tofu. TOFU! Isn't tofu for people who have dread locks and wear Birkenstocks with wool socks? (Oh wait, I think I've done that..) Every time I've tasted tofu in the past I hated it, but I thought I would give it a chance. He fried it up and put it in a stir-fry. It was bearable, but less than desirable. Anyway, I realize that it is cheaper and much healthier than meat, so I'll give it a go. Is it bad to deep fry tofu? Kind of defeats the purpose, no??? The kids hated it, so I'm trying to think of other ways to cook it. I got a book from the library called This Can't Be Tofu! but it looks a little too gourmet for me (I don't recognize some of the ingredients).

I should tell you that the reason behind the whole tofu thing was that my husband also thinks that we should only eat meat 2-3 times a week. Funny thing - I didn't think I was that attached to meat, but now that I'm trying to think vegan, it's pretty hard. We only had meat twice last week (I think...) but now I'm running out of ideas.

Send me your vegetarian recipes, folks!
I gotta go find me some steak...

Adrienne Turns Two (VERY two...)

She was ticked because we didn't let her eat her candles. We gave in and spoiled her on her birthday. She liked them better than her cake. (I don't think she actually swallowed any, just chewed them up and spit them out. Nice.)
