Muffin Quest

I'm looking for the ultimate carrot muffin recipe. Anyone got it??? I have tried so many different carrot muffins from plain old rubbery carrot to moist carrot bran muffins. But I want just a basic, spicy carrot muffin recipe...like the ones you get at Tim Hortons. Know what I mean? Hope someone can help me! I'll be anxiously awaiting...

1. Have you tried allrecipes.com?
2. You might have to start with more of a cake recipe to get a timmy's style muffin.

I've looked on allrecipes. But maybe I could look again. I wonder if I could try a cake but use oatmeal/whole wheat to make it into more of a muffin? I love a good reason to experiment!

Robyn, I would be glad to share this Carrot Muffin Recipe with you that my friend Lucy makes ! It takes 2 cups of carrots,and no bran. I have not made it real often yet, but I think they are really good !! Hope it is what you are looking for ! :) See you in Pa !!
Lucy's Carrot Muffins
2 c. brown sugar
1 1/2 c. whole wheat flour
1 1/2 c. white flour
2 teasp. baking soda
2 teasp baking powder
2 teasp. cinnamon
2 teasp. vanilla
1 c. milk
1 c. oil
1/2 c.rasins
2 c. grated raw carrots; pressed down
pinch of salt
4 eggs, well beaten
Mix all ingredients, only till dry ingred. are worked in.
Bake at 375 for 15-20 min

Mom, that looks like a really good recipe! robyn, let us know what you find. I often go to tastsofhome.com for recipes. I don't think I've tried anything from that site that I didn't like. You're making me hungry for carrot muffins!

Hi Robyn. I use the 14 Carrot Cake recipe out of Blueberries and Polar Bears. I use half the sugar called for, whole wheat flour instead of white (adding at least an extra 1/2 cup), and I blend the pineapple with the hand blender so it is smooth. (That is more for fussy eaters, but I prefer it non-chunky too.) Sometimes I use the coconut and sometimes not. These ones are a hit with my family, but I don't know whether or not they are close to Tim's. My guess is they would be closer without the pineapple.
