Thanks for all your ideas! I haven't checked all of them out yet, but I plan to. I was surprised how many recipes I use already that I forgot about. And it was a fun challenge to grocery shop yesterday and think of everything I could make without meat.
Here's a menu for the next little while...HIGHLY subject to change!
- Rice and Beans (with pico de gallo), and tortillas if I have time and energy!
- Homemade Mac and Cheese, with veggies on the side
- Chickpea Burgers
- Spinach and/or red pepper lasagne
- Broccoli Frittata
- Creamed Eggs on cornmeal mush (or polenta, as non-Mennos call it):-)
- Vegetable couscous (hope to find a Morrocan recipe that I know I have somewhere)
- Veggie Pizza with feta
- Butternut Squash curry (made by Daryl, and it's good!)
- and I'll think of some way to use my tofu... :-/
oh, and don't forget, I WILL throw one or two meals in there with beef, chicken or venison!

The chickpea burgers are really quite good, actually. You just can't pretend they're hamburgers. If you look under "vegetarian" on our recipe blog, you'll find them there.
Hey, so where do we find the recipes for all the other stuff? I'm interested in the squash curry stuff, red pepper lazagne, etc. etc. Also, have you ever tried once a month cooking or any variation of that? Just curious. I was looking at your recipe blog and some of the stuff looked so good, but like it would take SO much time - when do you fing the time???? AHHHH!!!!!!
Rachel, the recipe for the lasagne is on the last food post, Jennifer's comment. I can email you the squash curry if you want, and you can also look for Karla's spinach lasagne on the recipe sight. I've never tried once/month cooking, but it sounds like a good idea...although in some ways I would miss cooking things spontaneously. One way I find time to cook things is to make supper in the morning when the kids are happy (unless I can't let it sit all day). I don't always get that done. email me and tell me exactly what recipes you want.
